Windows 10 21H1, what will happen?

Microsoft clarified

This will allow these devices to continue to be supported to receive monthly updates that are critical to the safety and health of the ecosystem. Remember, you and your users can choose a convenient time for devices to restart and complete the update while still being productive.
Finally, if the configuration allows the transition to Windows 11, this remains optional. It will be necessary to manually intervene in Windows Update to approve and start the update process.
